There are many benefits to school cafeterias going meatless one day a week. It is a cost-effective initiative. It may help reduce children’s risk for chronic, preventable diseases, such as certain cancers, heart disease, and type 2 diabetes. It is environmentally friendly because it reduces the impact of a school community on carbon emissions, and water and fossil fuel use. In addition, it provides a school district with an opportunity to incorporate into an entrée the orange and leafy green vegetables required by the new USDA nutrition standards, introduced in 2012. Many school districts already offer meat-free options throughout the month. Promoting those options as Meatless Monday can rally a community around the idea and encourage students to purchase the breakfast and/or lunch.
